Made by organic practicing mother-son duo at Ronco delle Betulle, this Ribolla Gialla is basically a baby orange wineโa gateway for newbies to the category, or a softer take for amber enthusiasts. A few days of maceration gives the wine a bit more texture and complexity, but it remains approachable and explosively juicy. This Ribolla Gialla tastes of ripe orchard fruitsโyellow apple skin, pear tarte tatin, cantaloupeโalongside more herbaceous flavors of chamomile, sweet sage, and pressed mint. You might call it a white for red drinkers.
Special Serving Instructions: You want to let this one breath a little bit. This is a rather structured wine that can be on the tight side when first opened. Either decant or simply uncork and leave it be for an hour or so. Also chill, but not too muchโthis white behaves kind of like a red.
