Aged in giant, traditional clay vessels called tinajas, this Cencibel (Tempranillo) from the organic Bodegas Verum shows the variety in a new light. Tasting of red cherries and macerated strawberries, the wine also expresses a classic Spanish savoriness—sagebrush, dry earth, olive pit. With chalky, pillowy tannins, the wine is expansive without ever feeling heavy. The tinajas contribute a stony minerality and freshness to this youthful expression of Spain’s most famous grape.
